Which is better: Sake or Soju?
Soju is a colourless distilled drink that originated in Korea. This transparent liquid is typically drunk straight. The alcohol percentage ranges between 16.8 per cent to 53 per cent. The majority of soju brands are made in South Korea and contain wheat, barley, or rice. However, modern producers may substitute other starch-rich items such as tapioca, potatoes, and sweet potatoes.
Sake, often known as Japanese rice wine, is a Japanese beverage. Sake is prepared by fermenting rice after the bran has been removed. While wine includes alcohol (ethanol) formed via the fermentation of sugar in fruits (grapes), sake is made through a brewing process similar to that of beer. Starch is transformed into sugars and subsequently fermented into alcohol throughout this process.
In Japanese, the word "sake" means "liquor," and it is pronounced shu. Sake is the national drink, and it is frequently served at important occasions.
Sake and Soju are Japanese and South Korean alcoholic beverages. Sake, sometimes known as "rice wine," is a brewed beverage made from rice that has been distilled. It is fermented and matured in the same way that wine or beer is.
Soju is a Korean spirit that is similar to Vodka or whiskey.
Soju is made in a different way than Sake, using a unique production procedure. Soju is manufactured in two steps. The conversion of starch to sugar is the initial step, followed by the conversion of sugar to alcohol. After that, the combination is matured for a minimum of ten years.
There is a distinction between Soju and Sake production. Soju is distilled, whereas Sake is brewed. There is also a distinction in the environments in which the two beverages are produced. While Soju produces better in hotter regions, Sake produces better in cooler climates.
Soju is created from rice, barley, and sweet potatoes, whereas Sake is only made from rice. Because the two beverages are created from different ingredients, they have distinct scents. When compared to Soju, which has a distinct aroma of the base materials used, a Sake beverage has a mellow and soft aroma. Soju, unlike Sake, has a clear colour.

We travelled from Akita to Miyoshi (Tokushima) in one day to see the man 'Mamiya san', sick as a dog, freezing cold weather, got lost and spent an hour wandering around the (small) town. The atmosphere was like something out of Twin peaks with lots of funny/strange characters all around and we weren't sure what was going to happen. But it was all worth it.
Mamiya san makes very unconventional sake in every way. The flavours are bold, bright, vibrant with great mouth feel. This Tokubetsu Junmai is still light with tropical fruit aromas, pineapple zing and a slight sour tone towards the end. Many of our customers say it reminds them a bit of a wine. But it is different.
Easily paired with western style food like creamy pasta and dishes with full flavour.
